Will I be able to extend my experience in building this bench to building tables, cabinets, and other furniture?

The knowledge of tool usage and building that you gain in this class should easily translate into other projects such as coffee tables and small shelves. For more elaborate detailed projects like cabinetry, I would recommend the the woodworking: joinery techniques class as a follow up to this class. I'm commenting as someone who has taken the bench class and intends to take the joinery class for just that purpose.

Will this class conflict with the concrete countertops class?

There does appear to be a 2 hour overlap, but it could be possible to take both. Sometimes classes can run over and people will return to finish up their projects at a later time.
